Specification of TRISODIUM CITRATE DIHIDYRATE ex china
TRISODIUM CITRATE DIHYDRATE
Trisodium citrate has the chemical formula Na3C6H5O7. It is sometimes referred to simply as "sodium citrate", although sodium citrate can refer to any of the three sodium salts of citric acid. It has a salty, slightly sour taste. It is somewhat alkaline and can be used in conjunction with citric acid to make biologically compatible buffers.
Application
Food
Sodium citrate is mainly used as a food additive, usually for flavoring or as a preservative. Its E number is E331. Sodium citrate is used as a flavoring agent in certain types of club soda. It is common as an ingredient in bratwurst, and is also used in commercial ready-to-drink and beverage mixes, giving it a sour taste. It is found in gelatin mixtures [need clarification], ice cream, yogurt, jams, candy, powdered milk, processed cheese, carbonated drinks, and wine [citation needed], among others.
Sodium citrate can be used as an emulsifying stabilizer when making cheese. This allows the cheese to melt without becoming greasy by stopping the fat from separating.
Buffer
As the conjugate base of weak acids, citrate can function as a buffering agent or acidity regulator, which resists changes in pH. It is used to control acidity in some substances, such as gelatin desserts. Can be found in mini milk containers that are used with coffee machines. This compound is an antacid product, such as Alka-Seltzer, when dissolved in water. [Citation needed] The pH of a 5 g / 100 ml solution of water at 25 ° C is 7.5 - 9.0. It is added to many commercially packaged dairy products to control the PH impact of the human digestive system, especially in processed products such as cheese and yogurt.
